Pickles


  Yesterday on the way home from my hike i stopped at one of the farmers markets and decided to buy some cucumbers to make pickles.  During the spring my wife got some ball canning jars and a rack for our stock pot.
   The Brine!  The brine, the most important part of pickling, consisted of:
   

      1.  3/4 cup of pickling salt
      2.  3 cups of water
      3.  2 coups of vinegar
      4   1 tablespoon of pickling spice

  I put all this in a pot and let it boil.

   I prepared the jars by washing everything with soap and water.  The Cucumbers i washed with cold water.  I then pealed some garlic and washed the dill.  Each jar received a wad of dill and 2 cloves of garlic.  Then i packed the cucumbers.  Next i ladled in the brine, which smelled great!  During all this my stock pot water boiled and after putting on the lids I gave the pickles a water bath to preserve.  They all sealed up right and cooling right now.  Now on to the important stuff in life, FISHING.  I am headed out this evening so i hope all goes well.

  1. Wow, nice work. Later you can make Tartar, Rémoulade and Cumberland sauces with your pickles.

  2. Late last night I fired up a cheese burger topped it with a fresh tomato and a pickle slice. It was great!

  3. Very nice. I am trying to make pickles this year for the first time. I grew the cucumbers in my garden and just put them in jars to do their thing with the brine.
