Quick and Easy Clams

       Lunch, in my mind, should be a quick and easy meal.  Reaching into my refrigerator, I was able to get a dozen clams from my outing yesterday.  I guess you could just eat them raw and forgo the cooking process  to make it quick and easy, but i did want steamed clams.  Total time for this was about 15 minutes.

1.  Wash the clams.
2.  Steam the clams.
3.  Melt some butter in a pan
4.  Add garlic and a little onion( I used a Ramp)
5.  Simmer for 5 minutes and add a little clam stock.
6.  Add a squirt of lemon juice and you are ready to go.

    One of these days your going to have to take me clamming.

  2. Perfect size clams. Adding an acid(lemon) and an aromatic(onion,garlic) is classic. Meats are not overcooked in the photo. Beverage?
